Cooking for a family of four and menu planning for the week has been a major challenge. I've realized that with a little creativity, it isn't really too horrible. And I've gotten to try some recipes that I would have never even considered before the renovation. Thank goodness for prewashed veggies in a bag. (In these situations, I think paying the premium for those bagged veggies is well worth it.) Thank goodness for Chinese rice cookers, microwaves, toaster ovens, hot water pots, and crock pots. And thank goodness for a husband who doesn't complain about the food, even when the meat in the crock pot comes out dry (as it usually does).
We're almost there! Counter top guy came on Friday to take measurements and make a template. He had a fancy doo-dad on a tripod that could take automatic measurements. I didn't get a good look, but I wanna say it was hooked up to a computer and sent the measurements to the computer and made a model of the counter top. George was watching the whole time and I could tell he wanted the fancy doo-dad. :)
