Kitchen Renovation Day 31: Progress!

For the first time since December 21, 2012, we ate dinner at the dining table! Granted, the dining table is still in the living room. AND, to be completely fair, the girls and I were in Philly for the first ten days of the renovation, so it really has only been 21 days without a kitchen. Definitely 31 days for George, who subsisted on Ramen noodles, Apple Jacks, Frosted Mini Wheats, Frosted Flakes and Stella Artois while we were gone over winter break.

Hey, at least I bought him the "good" instant noodles. Funny enough, I can't find this brand of Chinese instant noodles at H-Mart, but Wegmans carries them for $1 each!

The house is kind of a disaster zone but I think we've fared pretty well considering we don't have a functioning kitchen.  Here is what I've been using to cook these past three weeks:
Not pictured is my parents' microwave from 1985-ish, which they had just gotten "rid of" (a.k.a. "moved to my dad's office) and I made him drag it all the way back just for us. Thanks, Dad!

My mom was nice enough to lend us her electric skillet. I don't know what I'd do without that thing that I used to think was only to be used for huo guo (hot pot).  We've made pot stickers, fried rice, tofu and veggie stir fry, pork chops, boiled eggs (for egg salad) AND I even popped popcorn in it!  And did you know that the old-school style Tatung rice cooker could not only cook and steam rice, but serve as a cooking implement as well?  I Googled "kitchen renovation recipes" and found this awesome quinoa recipe -- we had never eaten quinoa before, but after trying this recipe, it's definitely going to be a keeper in our dinner menu rotation.  The toaster oven is quite handy too -- especially for toasting those Eggo waffles in the morning.  I've also roasted chestnuts in it, and even made a yummy pretzel-rolo-pecan or m&m dessert to share at Kayla's kindergarten Inaugural Ball.

George has been documenting the kitchen project over on his Facebook page.  Some day, I'll transfer those pictures over here and blog about the different steps he went through.  He's been so wonderful and done such an amazing job that he's only needed to hire out once, for a plumber to "lower the waistline waste line" of the kitchen sink pipes (whatever that means). **after George corrected me, "waste line" makes MUCH more sense now! HA!

We couldn't have made it this far without the generous help from some amazing friends.  (You know who you are -- thank you!)  Friends who have:
  • bought me frozen pot stickers from Costco so I'll never have a "what on earth will we eat tonight?" moment
  • cooked a meal for my entire family, packed it up and brought it to work the next day
  • invited us over for dinner AND let me hijack their kitchen so I could wash, chop and prep my slow-cooker meal for the next day
  • driven 2+ hours from Philly to stand outside on a ladder for 4 hours to cut holes in our house and roof so we could vent out our new range hood!
The renovation is coming together nicely, and the end is in sight!
